  • 4 pieces boneless, skinless chicken breasts
  • 2 large lemons (one for juice, one for slices)
  • 1 cup olives (Kalamata or green, pitted)
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt, pepper, and dried oregano. Drizzle with olive oil and rub the seasoning into the meat to ensure it's coated evenly.
  3. In an oven-safe skillet, heat a little olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, taking care not to burn it.
Cooking
  1. Place the seasoned chicken in the skillet and sear for about 3-4 minutes on each side until golden brown.
  2. Once the chicken is seared, squeeze the juice of one lemon over the chicken. Add lemon slices and olives around the chicken in the skillet.
  3. Transfer the skillet to the preheated oven. Bake for 15-20 minutes or until the chicken is cooked through and no longer pink in the center.
  4. Carefully remove the skillet from the oven, and garnish with fresh parsley before serving hot.

Notes

For extra flavor, marinate the chicken in olive oil, lemon juice, and garlic for an hour before cooking. Adjust the cooking time based on the thickness of the chicken. Garnish with fresh herbs like parsley or thyme for added flavor.
