Mediterranean Chicken Gyros

Ingredients
  

For the Chicken Marinade
  • 1 pound boneless, skinless chicken thighs
  • 3 tablespoons olive oil
  • 1 medium Juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • to taste Salt and pepper
For Assembly
  • 4 pieces pita breads
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, sliced
  • 1 small red onion, thinly sliced
  • 1 cup tzatziki sauce store-bought or homemade

Method
 

Preparation
  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Add chicken thighs and coat well. Let them marinate for at least 15 minutes.
Cooking
  1. Heat a grill or skillet over medium-high heat. Remove chicken from marinade and cook for about 6-7 minutes on each side until cooked through and juices run clear.
  2. Allow chicken to rest for a few minutes, then slice into thin strips.
Assembly
  1. Warm the pita breads in a dry skillet or directly on the grill for a minute or two until they’re soft and pliable.
  2. Spread a generous amount of tzatziki sauce on each pita. Top with sliced chicken, cherry tomatoes, cucumber slices, and onion.
  3. Fold the pitas around the filling, secure with toothpicks if necessary, and serve immediately while warm!

Notes

For leftover gyros, store chicken and toppings in an airtight container for up to 3 days. Reheat chicken over low heat and keep tzatziki separate to prevent sogginess.
