Preparation
- Preheat your oven to 400°F (200°C).
- Lightly grease a baking dish with olive oil.
- In a bowl, combine the cbled feta cheese, chopped sun-dried tomatoes, parsley, oregano, and a drizzle of olive oil. Season with salt and pepper.
- Place the salmon fillets skin-side down in the prepared baking dish and sprinkle with salt and pepper.
- Spoon the feta and sun-dried tomato mixture evenly over each salmon fillet.
Cooking
- Bake in the preheated oven for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.
- Remove from the oven, garnish with fresh parsley, and serve with lemon wedges.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven. You can also freeze the salmon before baking.
