Main Ingredients
  • 4 pieces salmon fillets (about 6 oz each) Choose the freshest salmon available.
  • 4 oz feta cheese, cbled
  • 1/2 cup sun-dried tomatoes, chopped (in oil)
  • 2 tablespoons fresh parsley, chopped (or 1 tablespoon dried) For garnish and flavor.
  • 1 tablespoon olive oil For greasing the baking dish and mixing.
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • as needed Lemon wedges (for serving) To enhance flavor when serving.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a baking dish with olive oil.
  3. In a bowl, combine the cbled feta cheese, chopped sun-dried tomatoes, parsley, oregano, and a drizzle of olive oil. Season with salt and pepper.
  4. Place the salmon fillets skin-side down in the prepared baking dish and sprinkle with salt and pepper.
  5. Spoon the feta and sun-dried tomato mixture evenly over each salmon fillet.
Cooking
  1. Bake in the preheated oven for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.
  2. Remove from the oven, garnish with fresh parsley, and serve with lemon wedges.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven. You can also freeze the salmon before baking.
