  • 4 large large eggs
  • 200 g feta cheese Use high-quality feta for best results.
  • 1 cup cherry tomatoes, halved Fresh, organic tomatoes are preferable.
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • to garnish Fresh parsley

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, pour in 2 tablespoons of olive oil. Spread the halved cherry tomatoes evenly across the bottom, followed by crumbling the feta cheese over the top. Sprinkle the dried oregano, salt, and pepper on top.
  3. Make four small wells in the mixture with a spoon and crack one egg into each well.
  4. Place the baking dish in the preheated oven and bake for about 20 minutes, or until the whites are set but the yolks remain a little runny.
  5. Once out of the oven, scatter fresh parsley over the top and serve hot, preferably with crusty bread for dipping.

Notes

For best results, choose fresh, organic ingredients. You can substitute eggs with crumbled tofu and nutritional yeast for a vegan version. Store leftovers in an airtight container and reheat at 350°F (175°C) to maintain texture.
