Preparation
- Preheat your oven to 375°F (190°C).
- In a medium-sized oven-safe dish, drizzle the olive oil. Add the cherry tomatoes, dragging them around in the oil for a light coating.
- Crumble the feta cheese over the tomatoes, ensuring even coverage.
- Sprinkle dried oregano, salt, and pepper on top of the feta and tomatoes.
- Using the back of a spoon, make little wells in the feta-tomato mixture. Crack an egg into each well.
- Slide the dish into the preheated oven and bake for about 15-20 minutes, or until the egg whites are set but the yolks are still runny.
- Once out of the oven, sprinkle with fresh basil or parsley. Pair with crusty bread to mop up all the goodness!
