  • 200 grams feta cheese Choose high-quality, creamy feta.
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • to taste Salt
  • to taste Pepper
  • Fresh basil or parsley, for garnish
  • Crusty bread (optional, for serving)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a medium-sized oven-safe dish, drizzle the olive oil. Add the cherry tomatoes, dragging them around in the oil for a light coating.
  3. Crumble the feta cheese over the tomatoes, ensuring even coverage.
  4. Sprinkle dried oregano, salt, and pepper on top of the feta and tomatoes.
  5. Using the back of a spoon, make little wells in the feta-tomato mixture. Crack an egg into each well.
  6. Slide the dish into the preheated oven and bake for about 15-20 minutes, or until the egg whites are set but the yolks are still runny.
  7. Once out of the oven, sprinkle with fresh basil or parsley. Pair with crusty bread to mop up all the goodness!

Notes

Feta Quality: For the best results, choose a high-quality feta cheese. Customize by adding toppings like olives, spinach, or sautéed mushrooms. Store leftovers in an airtight container in the refrigerator for up to three days.
