Preparation
- In a medium bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, egg, minced garlic, and a pinch of salt and pepper. Mix well until all ingredients are fully incorporated.
- With your hands, roll the mixture into small meatballs, about 1 inch in diameter.
Cooking
- In a large soup pot over medium heat, add a splash of olive oil. Once heated, carefully place the meatballs in the pot and brown them on all sides for about 5 minutes.
- Add the diced onion, sliced carrots, and chopped celery to the pot. Cook for an additional 3-4 minutes until the veggies start to soften.
- Pour in the beef broth and diced tomatoes. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes.
- Stir in the spinach or kale, and season with Italian seasoning, salt, and pepper to taste. Let it simmer for another 5 minutes.
- Ladle the soup into bowls, garnish as desired, and enjoy!
