  • 2 cups cooked meatballs (beef, chicken, or turkey) Use pre-cooked or homemade meatballs.
  • 1 cup shredded cheese (Cheddar, Monterey Jack, or your favorite blend) Feel free to experiment with cheese options.
  • 4 large flour tortillas Larger tortillas work best for stuffing.
  • 1/2 cup marinara sauce (optional) Add for extra flavor; use as a dipping sauce.
  • to taste Olive oil For frying the quesadillas.
  • to taste Salt and pepper Season according to preference.
  • to taste Green onions or fresh cilantro for garnish (optional) Adds freshness on top when serving.

Method
 

Preparation
  1. If using pre-cooked meatballs, heat them according to package instructions. If making from scratch, form a mixture of ground meat, breadcbs, and seasonings, then cook in a skillet until browned.
  2. In a separate skillet, lightly warm your tortillas on medium heat for about 30 seconds on each side.
Assembly and Cooking
  1. On one half of each tortilla, layer a generous amount of meatballs, sprinkle cheese over them, and drizzle with marinara sauce if desired.
  2. Fold the tortilla over to create a half-moon shape. Drizzle olive oil in the same skillet and place the folded quesadilla in the pan.
  3. Cook for about 3-4 minutes on each side until crispy and golden brown.
Serving
  1. Once cooked, remove from the skillet, cut into wedges, and garnish with chopped green onions or cilantro. Serve warm with additional marinara sauce on the side.

Notes

For custom flavors, try adding jalapeƱos or experimenting with different cheese blends. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
