Cooking
- In a skillet over medium heat, brown the meatballs in a tablespoon of oil until all sides are golden.
- In a baking dish, spread half of the marinara sauce at the bottom. Place browned meatballs on top and cover with the remaining marinara sauce.
- Spoon the mashed potatoes over the meatballs, spreading evenly.
- Sprinkle the shredded mozzarella cheese generously over the mashed potatoes.
- Bake for approximately 30 minutes, or until the cheese is bubbly and golden.
- Let it sit for five minutes before garnishing with fresh parsley. Serve hot.
