Preparation
- Preheat your oven to 350°F (175°C).
- Grease a 9-inch round cake pan with butter or non-stick cooking spray.
- In a medium bowl, combine the sliced apples with 1/4 cup of granulated sugar, 1 teaspoon of ground cinnamon, and 1/2 teaspoon of nutmeg. Toss well and set aside.
- In another bowl, mix the flour, rolled oats, remaining 1/4 cup granulated sugar, brown sugar, and salt. Add the cold, cubed butter and mix until it resembles coarse crumbs.
- In a large mixing bowl, beat the mascarpone cheese and vanilla extract until smooth. Gradually mix in the remaining 1/2 cup of granulated sugar. Then add the flour and blend until just combined.
Assembly and Baking
- Pour half of the cake batter into the prepared pan and spread it evenly.
- Layer the spiced apples over the batter, then pour the remaining batter on top.
- Sprinkle the crumble mixture over everything.
- Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Cooling and Serving
- Let the cake cool in the pan for about 10 minutes before removing it.
- Slice and serve warm, optionally with whipped cream or vanilla ice cream.
Notes
Store tightly covered in the refrigerator for 3-4 days or freeze for up to a month. Reheat slices at 350°F (175°C) for about 10 minutes.
