Cake Base
  • 1 cup mascarpone cheese Creamy cheese for the filling.

Crumb Topping
  • 1/2 cup cold butter, cubed Important for crumb texture.
  • 1/2 cup brown sugar For sweetness in the crumble.
  • 1/2 cup rolled oats Adds texture to the topping.
  • 1 teaspoon ground cinnamon Enhances flavor.
  • 1/2 teaspoon ground nutmeg Adds warmth to the flavor.
  • 1/4 teaspoon salt Balances sweetness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan with butter or non-stick cooking spray.
  3. In a medium bowl, combine the sliced apples with 1/4 cup of granulated sugar, 1 teaspoon of ground cinnamon, and 1/2 teaspoon of nutmeg. Toss well and set aside.
  4. In another bowl, mix the flour, rolled oats, remaining 1/4 cup granulated sugar, brown sugar, and salt. Add the cold, cubed butter and mix until it resembles coarse crumbs.
  5. In a large mixing bowl, beat the mascarpone cheese and vanilla extract until smooth. Gradually mix in the remaining 1/2 cup of granulated sugar. Then add the flour and blend until just combined.
Assembly and Baking
  1. Pour half of the cake batter into the prepared pan and spread it evenly.
  2. Layer the spiced apples over the batter, then pour the remaining batter on top.
  3. Sprinkle the crumble mixture over everything.
  4. Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Cooling and Serving
  1. Let the cake cool in the pan for about 10 minutes before removing it.
  2. Slice and serve warm, optionally with whipped cream or vanilla ice cream.

Notes

Store tightly covered in the refrigerator for 3-4 days or freeze for up to a month. Reheat slices at 350°F (175°C) for about 10 minutes.
