  • 1 lb boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
Seasonings
  • 1 tsp dried thyme
  • 1 tsp Italian seasoning
  • to taste Salt and pepper

Method
 

Preparation
  1. Dice the onion, carrots, and celery, and mince the garlic.
Cooking
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, carrots, celery, and minced garlic. Sauté for about 5 minutes, until the vegetables have softened.
  3. Add the boneless chicken breasts to the pot. Pour in the chicken broth and bring to a gentle simmer.
  4. Cook for 15-20 minutes, or until the chicken is fully cooked and tender.
  5. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken back into the pot.
  6. Stir in the heavy cream, dried thyme, Italian seasoning, salt, and pepper. Let the soup simmer for an additional 5 minutes.
  7. Serve the soup hot and garnish with fresh parsley.

Notes

For an extra nutritional boost, add a cup of spinach or kale. For a kick, add a pinch of red pepper flakes. Store leftovers in an airtight container in the refrigerator for up to three days; freeze for up to three months.
