- Dice the onion, carrots, and celery, and mince the garlic.
Cooking
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, carrots, celery, and minced garlic. Sauté for about 5 minutes, until the vegetables have softened.
- Add the boneless chicken breasts to the pot. Pour in the chicken broth and bring to a gentle simmer.
- Cook for 15-20 minutes, or until the chicken is fully cooked and tender.
- Remove the chicken from the pot and shred it using two forks. Return the shredded chicken back into the pot.
- Stir in the heavy cream, dried thyme, Italian seasoning, salt, and pepper. Let the soup simmer for an additional 5 minutes.
- Serve the soup hot and garnish with fresh parsley.
Notes
For an extra nutritional boost, add a cup of spinach or kale. For a kick, add a pinch of red pepper flakes. Store leftovers in an airtight container in the refrigerator for up to three days; freeze for up to three months.
