  • 2 large chicken breasts (boneless and skinless) – about 1 pound
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 cloves garlic (minced)
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes (chopped, dried or in oil)
  • ½ cup chicken broth
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper

Method
 

Preparation
  1. Season the chicken breasts with salt and pepper to taste.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the chicken breasts and sear for about 5-6 minutes on each side until they are golden brown and cooked through.
  4. Remove the chicken from the skillet and set aside.
Making the Sauce
  1. In the same skillet, melt the butter and add minced garlic. Sauté for about 1 minute until fragrant.
  2. Slowly pour in the heavy cream and chicken broth while stirring. Bring to a simmer.
  3. Stir in the chopped sun-dried tomatoes and Italian seasoning. Allow the mixture to simmer for about 3-4 minutes until it thickens slightly.
  4. Return the chicken to the skillet, coat it with the creamy sauce, and let it simmer for another 2-3 minutes to heat through.
  5. Serve the Marry Me Chicken hot, garnished with fresh basil for an aromatic touch!

Notes

To ensure perfect chicken, use a meat thermometer (165°F is ideal). Optional: personalize the sauce with favorite herbs or a splash of lemon juice. Leftovers can be refrigerated for 3 days or frozen for 3 months.
