  1. Start by gathering all your ingredients and chopping the red onion and dates. It’s easier to have everything laid out before you begin.
  2. In a medium-sized bowl, whisk together the white balsamic vinegar and olive oil. Season generously with salt and pepper to taste.
  3. Add the cooked white beans, chopped dates, and red onion into the bowl with the dressing. Gently toss everything together so the beans and dates are well-coated with the dressing.
  4. Allow the salad to sit for about 10-15 minutes. This step is crucial! It lets all the flavors meld beautifully.
  5. Just before serving, give the salad a final toss, garnish with fresh parsley, and serve chilled or at room temperature for the best experience.

Notes

Consider adding chickpeas or black beans for a different texture. Storing in an airtight container in the refrigerator will keep it fresh for about 3 days.
