Ingredients

Main ingredients
  • 2 cans black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed (or any preferred variety)
  • 1 cup fresh cilantro, chopped
  • 1/4 cup lime juice (about 2-3 limes, freshly squeezed) Freshly squeezed preferred
  • 1/4 cup olive oil
  • Salt and pepper, to taste
  • 1/2 onion finely chopped (optional) Optional ingredient
  • 1 bell pepper diced (optional) Optional ingredient
  • 2 cloves garlic, minced (optional) Optional ingredient

Method

Preparation
  1. Start by draining and rinsing the canned beans in a colander. Chop the fresh cilantro, onion, bell pepper, and garlic if you're using them.
  2. In a large bowl, combine the black beans, kidney beans, chopped cilantro, onion, bell pepper, and garlic.
  3. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. This is where the magic happens!
  4. Pour the dressing over the bean mixture and gently stir to combine, ensuring all the ingredients are coated.
  5. For the best flavor, let the salad marinate for at least 30 minutes in the refrigerator.
  6. Give it a good stir before serving. Enjoy it cold or at room temperature!

Notes

Feel free to mix and match your favorite bean varieties. Use freshly squeezed lime juice for the best flavor. Allow the salad to sit to enhance flavors, and be gentle when mixing to avoid mashing the beans. Store leftovers in an airtight container for up to 3 days, or freeze for up to a month. Defrost overnight in the fridge before serving.
