Preparation
- Preheat your oven to 375°F (190°C).
- In a bowl, mix together the pumpkin puree, brown sugar, cinnamon, nutmeg, and ginger to create the filling.
- If using pie crusts, roll out your dough on a lightly floured surface until about 1/8 inch thick.
- Cut the dough into rectangles, typically around 4x6 inches.
Assembly and Baking
- Place a generous spoonful of the filling in the center of half of the rectangles.
- Brush the edges with the egg wash and place the remaining rectangles on top.
- Press the edges with a fork to seal.
- Place the assembled poptarts on a parchment-lined baking sheet and bake for 25 minutes or until golden brown.
Glazing
- While the poptarts are baking, whisk together the powdered sugar, maple syrup, and milk until smooth.
- Once the poptarts are out of the oven and cooled slightly, drizzle the glaze over the tops.
Serving
- Allow the glaze to set before serving warm or at room temperature.
Notes
To store, let poptarts cool completely and keep in an airtight container for up to four days in the refrigerator or freeze for up to two months. Reheat in oven at 350°F (175°C) for about 10 minutes or microwave for 15-20 seconds.
