- In another bowl, whisk together the buttermilk, maple syrup, vegetable oil, egg, and vanilla extract until well combined.
- Pour the wet mixture into the dry ingredients, stirring gently. Be careful not to overmix; a few lumps are okay!
- Fill each muffin cup about two-thirds full with the batter.
Baking
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for five minutes before transferring to a wire rack to cool completely.
