  • 0.5 cups brown sugar, packed
  • 1 tablespoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
Wet Ingredients
  • 0.5 cups maple syrup
  • 1 cup buttermilk, room temperature or substitute with a mix of milk and vinegar for Halal compliance
  • 0.33 cups vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract ensure it’s alcohol-free

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Prepare a muffin tin by lining it with paper liners or greasing it lightly.
  2. In a large mixing bowl, whisk together the all-purpose flour, brown sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the buttermilk, maple syrup, vegetable oil, egg, and vanilla extract until well combined.
  4. Pour the wet mixture into the dry ingredients, stirring gently. Be careful not to overmix; a few lumps are okay!
  5. Fill each muffin cup about two-thirds full with the batter.
Baking
  1. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  2. Cool in the pan for five minutes before transferring to a wire rack to cool completely.

Notes

Keep it fresh: Use fresh baking powder and baking soda for that ideal rise. For variations, consider incorporating nuts, chocolate chips, or even dried fruits that complement the maple flavor. These muffins are best enjoyed fresh but can be stored in an airtight container at room temperature for up to 3 days or frozen for up to one month.
