  • 2 pieces ripe mangoes, peeled and diced Save some for garnish.
  • 1/2 cup sago pearls Ensure they are Halal-compliant.
  • 1 cup coconut milk
  • 1/2 cup sugar Adjust to taste.
  • 2 cups water

Method
 

Cooking and Preparation
  1. In a pot, bring 2 cups of water to a boil. Add in the sago pearls and cook for about 10-15 minutes, stirring occasionally until the pearls turn translucent and slightly chewy.
  2. Once ready, drain and rinse the sago pearls under cold water to prevent sticking.
  3. In a blender, combine one diced mango and a bit of coconut milk to create a smooth mango puree.
  4. In a mixing bowl, combine the cooked sago pearls with the remaining coconut milk, sugar, and the mango puree. Stir well until everything is well incorporated.
  5. Transfer the mixture to serving bowls, and refrigerate for at least 30 minutes to allow the flavors to meld together.
  6. Before serving, top with additional diced mango and a sprinkle of shredded coconut if desired.
  7. Enjoy the layers of flavor and texture!

Notes

You can substitute with other fruits like bananas or strawberries. Avoid overcooking the sago pearls to maintain their ideal chewy texture. Store in an airtight container for up to three days.
