  • 2 pieces ripe mangoes Use the ripest mangoes for the best natural sweetness.
  • 1 cup coconut milk
  • 1/4 cup sugar or honey Adjust to taste. Ensure it's Halal-compliant.
  • 1 tablespoon lime juice
  • 1 pinch salt

Method
 

Preparation
  1. Peel the ripe mangoes and remove the pit. Chop the flesh into small cubes.
  2. In a blender, combine the chopped mangoes, coconut milk, sugar or honey, lime juice, and a pinch of salt. Blend until the mixture is smooth and creamy. Taste and adjust sweetness if needed.
  3. Pour the mango mixture into popsicle molds, leaving a little space at the top for expansion during freezing.
  4. If your molds don’t come with built-in sticks, insert popsicle sticks into the center of each mold.
  5. Place the molds in the freezer and allow them to freeze for at least 6 hours or until completely solid.
  6. Run warm water over the outside of the molds for a few seconds before removing the popsicles.

Notes

Feel free to substitute with other tropical fruits like pineapple or papaya. Store in an airtight container in the freezer for up to three months.
