- Cut the ripe mangoes into chunks and measure out a cup of pineapple chunks.
- In a blender or food processor, combine the mango chunks, pineapple chunks, coconut milk, honey (or agave syrup), and lime juice.
- Blend the mixture until it is completely smooth and creamy. For a thicker consistency, freeze the fruit chunks beforehand.
- Taste the mixture and add more honey or agave syrup if you prefer it sweeter.
- Pour the creamy mixture into an airtight container and freeze for at least 3-4 hours, or until firm.
- Once frozen, scoop out the nice cream and serve in bowls. Top with shredded coconut, nuts, or your favorite toppings.
Notes
Use fresh, ripe fruit for the best flavor. For added flavor, consider incorporating vanilla extract or a pinch of salt. Store in the freezer for up to 2 weeks.
