Ingredients
  

For the crumble base
  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted can substitute with coconut oil for a dairy-free option
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
For the mango filling
  • 2 cups ripe mango, diced make sure they are ripe and slightly soft
  • 2 tablespoons lemon juice
  • 1 tablespoon sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the rolled oats, all-purpose flour, brown sugar, melted butter, salt, and cinnamon, and mix until crumbly.
  3. In another bowl, mix the diced mango with lemon juice and sugar.
  4. Grease an 8x8 inch baking dish and press half of the oat mixture into the bottom.
  5. Spread the mango mixture evenly over the base.
  6. Crumble the remaining oat mixture over the mango layer.
Baking
  1. Bake in the preheated oven for about 25-30 minutes until the topping is golden brown.
  2. Let the bars cool in the pan for at least 10 minutes.
Serving
  1. Cut into squares and serve warm or at room temperature.

Notes

Ensure to use ripe mango for the best flavor. Allow the bars to cool completely before cutting for better shape. Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for a week.
