Preparation
- Preheat your oven to 350°F (175°C).
- Grease a 9×9-inch baking dish or line it with parchment paper.
- In a large mixing bowl, combine rolled oats, flour, brown sugar, cinnamon, and salt.
- In a separate bowl, mix melted butter, honey (or maple syrup), and lemon juice until combined.
- Pour the wet mixture into the dry ingredients and stir until crumbly.
- Gently fold in the diced mango.
- Pour half of the crumble mixture into the baking dish and press down firmly.
- Spread the remaining mixture over the top of the mango layer.
Baking
- Bake in the preheated oven for about 25-30 minutes, or until golden brown.
- Let the bars cool in the pan for at least 10 minutes before cutting into squares.
Notes
Store leftovers in the refrigerator for up to 5 days, or freeze for up to 3 months. Reheat in a preheated oven at 350°F (175°C) for about 10 minutes.
