Ingredients
  

For the Mango Mousse
  • 2 pieces ripe mangoes, pureed Use sweet and ripe mangoes for the best flavor.
  • 1 cup heavy cream Chilled for best results.
  • 1/2 cup sugar
  • 2 tablespoons gelatin
  • 1/4 cup water Used to dissolve the gelatin.
  • 1 teaspoon vanilla extract
For the Cake
  • 1 pre-made cake layer vanilla or sponge Store-bought or homemade.
  • to taste Fresh mango slices for garnish

Method
 

Preparation
  1. Peel and chop the ripe mangoes, then blend them until smooth to create a thick mango puree. Set aside.
  2. In a small bowl, combine the gelatin and water. Allow it to sit for about 5 minutes until it blooms. Then, gently heat it in the microwave for about 15 seconds until fully dissolved. Be careful not to boil the mixture!
  3. In a separate bowl, whip the heavy cream and sugar together until soft peaks form.
  4. Once the gelatin mixture has cooled slightly, add it to your mango puree and mix well. Then fold in the whipped cream and vanilla extract gently until combined.
Assembly
  1. Place the pre-made cake layer on a serving platter. Pour the mango mousse over the cake, smoothing the top with a spatula.
  2. Refrigerate for at least 2-4 hours or until set.
Garnishing
  1. Once the mousse has set, decorate with fresh mango slices and serve chilled.

Notes

Use ripe, sweet mangoes for enhanced flavor. You may substitute with strawberries or passion fruit for different fruit flavors.
