Ingredients

Main Ingredients
  • 2 pieces ripe mangoes, peeled and diced Make sure your mangoes are perfectly ripe for optimal sweetness!
  • 1 cup plain yogurt For a low-fat option, consider using low-fat yogurt.
  • 1/2 cup milk Substitute with non-dairy milk for a dairy-free version.
  • 1/4 cup sugar Adjust to taste.
  • 1/2 teaspoon cardamom powder
  • 1 tablespoon Juice of lime

Method

Preparation
  1. Peel and dice your ripe mangoes into small pieces.
  2. In a blender, combine the diced mangoes, plain yogurt, milk, sugar, cardamom powder, and lime juice. Blend until smooth, about 1-2 minutes. Taste it and adjust the sweetness with more sugar if necessary.
  3. Carefully pour the mango lassi mixture into popsicle molds, leaving a bit of space at the top as they will expand when frozen.
  4. If your popsicle molds don’t have built-in sticks, insert wooden popsicle sticks into the center of each mold.
  5. Place the molds in the freezer for at least 6 hours or until completely solid.
  6. When ready to enjoy, run warm water over the outside of the molds for a few seconds to help release the popsicles.

Notes

Mango Lassi Popsicles can be stored in the freezer for up to 2 months. Keep them tightly sealed in their molds or transfer them to a freezer-safe bag or container. For easier release, let them sit at room temperature for a few minutes or run cool water over the molds.
