Preparation
- Peel and dice your ripe mangoes into small pieces.
- In a blender, combine the diced mangoes, plain yogurt, milk, sugar, cardamom powder, and lime juice. Blend until smooth, about 1-2 minutes. Taste it and adjust the sweetness with more sugar if necessary.
- Carefully pour the mango lassi mixture into popsicle molds, leaving a bit of space at the top as they will expand when frozen.
- If your popsicle molds don’t have built-in sticks, insert wooden popsicle sticks into the center of each mold.
- Place the molds in the freezer for at least 6 hours or until completely solid.
- When ready to enjoy, run warm water over the outside of the molds for a few seconds to help release the popsicles.
Notes
Mango Lassi Popsicles can be stored in the freezer for up to 2 months. Keep them tightly sealed in their molds or transfer them to a freezer-safe bag or container. For easier release, let them sit at room temperature for a few minutes or run cool water over the molds.
