Ingredients
  

For the Mango Curd
  • 2 pieces ripe mangoes, pureed Select ripe mangoes for the best flavor.
  • 1/2 cup sugar Adjust sweetness to taste.
  • 1/4 cup lemon juice
  • 4 large eggs
  • 1/2 cup unsalted butter, cubed Use Halal-certified butter.
For the Tart Shell
  • 1 piece pre-baked tart shell

Method
 

Preparation
  1. Peel the mangoes and cut them into chunks. Blend them in a food processor until smooth. Measure out 1 ½ cups of the puree for your tart filling.
  2. In a medium-sized bowl, whisk together the sugar, lemon juice, and eggs. Combine this mixture with the mango puree until well blended.
  3. In a saucepan, gently melt the cubed unsalted butter over low heat. Once melted, remove it from the heat and gradually stir in the mango mixture, ensuring everything is well combined.
Cooking
  1. Place the saucepan back on low heat, continuously stirring the curd mixture for about 10-15 minutes or until it thickens.
  2. Pour the mango curd into the pre-baked tart shell. Use a spatula to smooth the top, ensuring even distribution.
Chilling
  1. Refrigerate the tart for at least 2 hours to allow it to set properly.
Serving
  1. Once chilled, slice the mango curd tart and serve it with your favorite toppings.

Notes

This Mango Curd Tart will last for about 3-4 days in the refrigerator when stored in an airtight container. If you want to freeze it, wrap the tart tightly with plastic wrap and then with aluminum foil.
