Preparation
- Peel the mangoes and cut them into chunks. Blend them in a food processor until smooth. Measure out 1 ½ cups of the puree for your tart filling.
- In a medium-sized bowl, whisk together the sugar, lemon juice, and eggs. Combine this mixture with the mango puree until well blended.
- In a saucepan, gently melt the cubed unsalted butter over low heat. Once melted, remove it from the heat and gradually stir in the mango mixture, ensuring everything is well combined.
Cooking
- Place the saucepan back on low heat, continuously stirring the curd mixture for about 10-15 minutes or until it thickens.
- Pour the mango curd into the pre-baked tart shell. Use a spatula to smooth the top, ensuring even distribution.
Chilling
- Refrigerate the tart for at least 2 hours to allow it to set properly.
Serving
- Once chilled, slice the mango curd tart and serve it with your favorite toppings.
Notes
This Mango Curd Tart will last for about 3-4 days in the refrigerator when stored in an airtight container. If you want to freeze it, wrap the tart tightly with plastic wrap and then with aluminum foil.
