  • 1 cup rolled oats
  • 1 cup coconut milk Can substitute with almond milk or oat milk.
  • 1 ripe mango, diced
  • 1 tablespoon chia seeds Optional for added nutrition.
  • 1 tablespoon honey or maple syrup Use maple syrup for a vegan option.
  • 1/4 cup shredded coconut For topping.
  • 1 pinch salt

Method
 

Preparation
  1. In a medium bowl or jar, combine the rolled oats and coconut milk. Stir well to make sure the oats are fully soaked in the milk.
  2. Mix in the chia seeds, honey or maple syrup, and a pinch of salt. Stir to combine all the ingredients evenly.
  3. Cover the bowl or seal the jar. Place it in the refrigerator and let it sit overnight—about 6-8 hours—for the oats to soak up the flavors.
Serving
  1. When you’re ready to serve, remove the oats from the fridge and give them a good stir.
  2. Top with diced mango and shredded coconut, and enjoy!

Notes

These oats can be stored in the refrigerator for up to 3 days in an airtight container. Reheating is not necessary, but if you prefer it warm, microwave it for a few seconds. Consider adding yogurt or nuts for an extra treat.
