Preparation
- In a medium bowl or jar, combine the rolled oats and coconut milk. Stir well to make sure the oats are fully soaked in the milk.
- Mix in the chia seeds, honey or maple syrup, and a pinch of salt. Stir to combine all the ingredients evenly.
- Cover the bowl or seal the jar. Place it in the refrigerator and let it sit overnight—about 6-8 hours—for the oats to soak up the flavors.
Serving
- When you’re ready to serve, remove the oats from the fridge and give them a good stir.
- Top with diced mango and shredded coconut, and enjoy!
Notes
These oats can be stored in the refrigerator for up to 3 days in an airtight container. Reheating is not necessary, but if you prefer it warm, microwave it for a few seconds. Consider adding yogurt or nuts for an extra treat.
