  • 1/2 cup unsalted butter, melted
  • 1 cup milk can be substituted with almond milk for a dairy-free version
  • 2 cups fresh lemon juice
  • Zest of 1 lemon

  • powdered sugar for dusting

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the granulated sugar, all-purpose flour, baking powder, and salt. Whisk together until well mixed.
  3. Pour in the melted butter and milk. Stir until just combined, taking care not to overmix. The mixture should be slightly lumpy.
  4. Add the fresh lemon juice and zest to your batter, then stir gently.
Baking
  1. Pour the batter into a greased 9x13-inch baking dish. Bake for 30 to 40 minutes, or until the top is golden brown and the center is just set.
Serving
  1. Allow the cobbler to cool slightly before dusting with powdered sugar. Serve warm, optionally with whipped cream or fresh berries.

Notes

For a dairy-free version, substitute almond milk and coconut oil for milk and butter. Keep an eye on your cobbler as baking times may vary; check at 30 minutes to avoid overbaking. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months.
