For the Apple Filling
  • 4 cups apples, peeled and sliced Choose apples that hold their shape well when baked, such as Granny Smith or Honeycrisp.
  • 1/2 cup erythritol or other keto-friendly sweetener
  • 1 teaspoon cinnamon Divided
  • 1/2 teaspoon nutmeg Divided
  • pinch salt
For the Topping
  • 1 cup almond flour
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract Optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Prepare the apples by peeling, coring, and slicing them into thin pieces.
  3. Combine the apples in a large mixing bowl. Add half of the cinnamon, nutmeg, and erythritol; gently toss to coat the apples.
  4. In a separate bowl, mix together the almond flour, melted butter, remaining erythritol, cinnamon, nutmeg, and a pinch of salt until crumbly.
  5. Spread the apple mixture evenly in an 8x8 inch (or similar size) baking dish.
  6. Sprinkle the topping evenly over the apples.
Baking
  1. Bake in the preheated oven for 25 to 30 minutes, until the apples are tender and the topping is golden brown.
  2. Let it cool slightly before serving.

Notes

Store in the refrigerator for up to 4 days or freeze for three months. Reheat in the oven at 350°F for about 10-15 minutes or in the microwave covered with a damp paper towel.
