  • 1 lb ground turkey or chicken You can use lean beef or tofu for a vegetarian option.
  • 1 bag colselaw mix (14 oz)
  • 2 pieces green onions, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced Adjust according to taste.
  • 3 tablespoons soy sauce Check for Halal certification.
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large skillet or wok, heat the sesame oil over medium-high heat.
  2. Add the ground turkey or chicken to the skillet. Season with a little salt and pepper, and cook until it’s browned through (approximately 5-7 minutes).
  3. Once the meat is cooked, add the minced garlic and ginger. Stir-fry for an additional 1-2 minutes until fragrant.
  4. Toss in the coleslaw mix and cook, stirring frequently, for about 3-4 minutes until the cabbage is slightly wilted yet still crunchy.
  5. Pour in the soy sauce and add the sliced green onions. Mix everything together and allow it to heat for another minute.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months. Reheat in a skillet or microwave, being careful not to overheat.
