  • 4 pieces boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese Freshly grated is preferred.
  • 1 cup breadcrumbs Plain or Italian-seasoned.
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning Optional.
  • to taste Salt and pepper
  • 1/2 cup mayonnaise
  • 1 tablespoon olive oil For drizzling.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Pat dry the chicken breasts with paper towels and season both sides with salt, pepper, garlic powder, onion powder, and Italian seasoning.
  3. In a bowl, mix together the Parmesan cheese, breadcrumbs, and a bit more salt and pepper.
  4. Spread the mayonnaise evenly over the chicken breasts.
  5. Press each mayonnaise-coated chicken breast into the breadcrumb mixture on both sides.
  6. Place the chicken on a greased baking sheet and drizzle with olive oil.
Cooking
  1. Bake the chicken in the preheated oven for about 25-30 minutes or until cooked through and the crust is golden brown.
  2. Remove from the oven and let it rest for a few minutes before serving.

Notes

Pair with a fresh side salad or roasted veggies. Store leftovers in an airtight container for up to 3 days.
