Cheesecake Base
  • 2 cups cream cheese, softened Ensure cream cheese is at room temperature for easy mixing.
  • 1 cup sugar
  • 1 cup heavy cream Alternatively, use full-fat coconut milk for a dairy-free version.
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/3 cup all-purpose flour

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Line a standard loaf pan with parchment paper, leaving some overhang for removal. Lightly grease the sides.
  3. In a large mixing bowl, use a hand mixer to beat the softened cream cheese and sugar until smooth, about 2 minutes.
  4. Gradually add the heavy cream, eggs, vanilla extract, salt, and flour. Mix until just combined.
  5. Pour the mixture into the prepared loaf pan, smoothing the top with a spatula.
Baking
  1. Bake for about 40-45 minutes, or until the top is golden-brown and the center is set.
Cooling
  1. Remove from the oven and cool for at least 1 hour before refrigerating for a minimum of 4 hours (or overnight).

Notes

Keep an eye on the cheesecake towards the end of the baking time to avoid burning. Store tightly wrapped in the refrigerator for up to 5 days, or freeze for up to 3 months.
