Method
Prepare the Potatoes

- While the potatoes are baking, heat a skillet over medium heat. Add the ground beef or turkey, breaking it apart with a spatula.
- Sprinkle in the taco seasoning along with salt and pepper. Cook until browned and no longer pink.

- In a large mixing bowl, mix together black beans, corn, and diced tomatoes. This will serve as your fresh topping!
Slice and Load
- Once the potatoes are baked, take them out and let them cool for a few minutes.

Notes
