Ingredients
  

For the Meatloaf
  • 1 pound ground beef (or turkey for a leaner option)
  • 1 cup breadcbs
  • 1 large egg
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • to taste Salt and pepper
For the Potato Layer
  • 6 medium-sized potatoes, peeled and shredded (about 4 cups)
  • 1 cup sour cream
  • 1/2 cup milk (optional, for a creamier potato layer)
For the Toppings
  • 1 cup shredded cheddar cheese
  • 1 cup green onions, chopped (for garnish)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground beef, breadcbs, egg, chopped onion, minced garlic, Italian seasoning, salt, and pepper. Mix until everything is well incorporated.
  3. Transfer the meat mixture into a greased 9x13 inch baking dish, forming a loaf shape in the center.
  4. In another bowl, mix the shredded potatoes with sour cream, salt, and pepper. If desired, add milk for a creamier texture.
Assembly
  1. Spoon the potato mixture over the meatloaf, spreading it evenly to cover the entire loaf.
  2. Sprinkle shredded cheddar cheese over the potato layer.
Baking
  1. Place the casserole in the preheated oven and bake for 45 minutes, or until the meat is cooked through and the potatoes are tender.
  2. Remove the casserole from the oven and allow it to cool for a few minutes. Top with fresh green onions before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months. When reheating, use the microwave or place it back in the oven at 350°F (175°C) until warmed through.
