Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the ground beef, breadcbs, egg, chopped onion, minced garlic, Italian seasoning, salt, and pepper. Mix until everything is well incorporated.
- Transfer the meat mixture into a greased 9x13 inch baking dish, forming a loaf shape in the center.
- In another bowl, mix the shredded potatoes with sour cream, salt, and pepper. If desired, add milk for a creamier texture.
Assembly
- Spoon the potato mixture over the meatloaf, spreading it evenly to cover the entire loaf.
- Sprinkle shredded cheddar cheese over the potato layer.
Baking
- Place the casserole in the preheated oven and bake for 45 minutes, or until the meat is cooked through and the potatoes are tender.
- Remove the casserole from the oven and allow it to cool for a few minutes. Top with fresh green onions before serving.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months. When reheating, use the microwave or place it back in the oven at 350°F (175°C) until warmed through.
