  • 1 cup shredded cheese (cheddar or your favorite blend)
  • 1 cup chopped bell peppers (red, green, or yellow for color)
  • 1 cup pre-made taco-sized tortillas

Cooking the Filling
  1. In a large skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess grease.
  2. Stir in the packet of taco seasoning with water according to package instructions. Mix until well combined.
  3. Add the chopped bell peppers and cook for an additional 2-3 minutes until they soften slightly.
Assembling the Tacos
  1. Take a tortilla and place a generous spoonful of the meat mixture in the center. Top with shredded cheese.
  2. Carefully fold the tortilla over the filling to create a pocket. You can use toothpicks to secure it, if necessary.
Cooking the Tacos
  1. Heat a non-stick skillet over medium heat. Cook the taco pockets on each side for about 3-4 minutes until they are crispy and golden brown.
  2. Remove from the skillet and serve with sour cream, diced tomatoes, and fresh lettuce.

Notes

Feel free to substitute ground beef with chicken, turkey, or a meat alternative for a vegetarian option. Adding chili powder or cumin can elevate the flavor. Store leftovers in an airtight container in the refrigerator for up to 2-3 days.
