  • 4 large large flour tortillas
  • 1 lb ground beef (Halal-certified)
  • 1 cup cheddar cheese, shredded
  • 1 cup sour cream
  • 1 packet taco seasoning
  • 1 can refried beans (15 oz)
  • 1 cup salsa
  • 1-2 pieces jalapeños, sliced (optional for spice)
  • 1 tsp cumin
  • 1 piece bell pepper, diced (optional)

Method
 

Preparation
  1. In a skillet over medium heat, brown the ground beef until it’s fully cooked, which should take about 5–7 minutes. Drain any excess fat.
  2. Stir in the taco seasoning, cumin, and a splash of water (about 1/4 cup). Let it simmer for an additional 2–3 minutes so the flavors meld beautifully; then remove from heat.
  3. In a separate pan or microwave, warm the flour tortillas until they are pliable.
Assembly
  1. On each tortilla, spread a layer of refried beans, followed by a scoop of the seasoned ground beef, a sprinkle of shredded cheddar, and a dollop of sour cream. Add salsa and jalapeños for extra flavor, if desired.
  2. Fold the sides of the tortilla over the filling, then roll it up from the bottom, tucking the filling in as you go.
Cooking
  1. Lay the burritos seam-side down in the skillet and sprinkle additional cheese on top. Cover and cook on low heat for 2-3 minutes until the cheese is melted and everything is warm.
  2. Cut the burritos in half and serve with more salsa, jalapeños, or sour cream on the side.

Notes

For substitutions, feel free to use ground turkey or chicken, or make it vegetarian with black beans or lentils. To store, keep leftovers in an airtight container for 3-4 days or freeze for up to 2 months. When reheating, cover with foil to prevent drying out.
