Ingredients

  • 8 oz cream cheese, softened Should be at room temperature for easy mixing.
  • 1 cup powdered sugar Adjust based on sweetness preference.
  • 1/4 cup fresh lemon juice Freshly squeezed for best flavor.
  • 1 tablespoon lemon zest For an extra burst of lemon flavor.
  • 1 cup crushed graham crackers Gives the truffle mixture structure.
  • 1/2 cup shredded coconut (optional) Can be used for coating or mixed in.
For coating
  • to taste additional powdered sugar For rolling the truffles.

Preparation
  1. Gather all your ingredients on a clean countertop or table.
  2. In a mixing bowl, blend 8 oz of softened cream cheese until smooth and creamy.
  3. Gradually mix in 1 cup of powdered sugar, followed by 1/4 cup of fresh lemon juice and 1 tablespoon of lemon zest. Mix until well incorporated.
  4. Gently fold in 1 cup of crushed graham crackers until fully combined.
  5. Using your hands, portion out small amounts of the mixture (about 1 inch in diameter) and roll them into bite-sized balls.
  6. Roll each truffle in the additional powdered sugar or shredded coconut for extra sweetness.
Chilling
  1. Place the truffles in the refrigerator for at least 30 minutes to firm up before serving.
  2. Once chilled, plate your Lemon Truffles and enjoy!

Notes

For variations, try using different coatings like finely chopped nuts or cocoa powder. Taste the mixture as you go to adjust sweetness.
