Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and powdered sugar using an electric mixer or whisk until light and fluffy, about 2-3 minutes.
  3. Mix in the vanilla extract, lemon zest, and lemon juice until fully incorporated.
  4. Gradually sift in the flour and salt, mixing on low speed until just combined.
  5. Scoop tablespoon-sized portions of the dough, roll them into balls, and place them on a parchment-lined baking sheet, allowing space for spreading.
Baking
  1. Bake in the preheated oven for 15-20 minutes, or until slightly golden around the edges.
  2. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
  3. Let them cool completely before dusting with powdered sugar, if desired.

Notes

For a firmer cookie, chill the dough for about 30 minutes before shaping. Experiment with different flavors by adding a touch of lavender or orange zest.
