Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and powdered sugar using an electric mixer or whisk until light and fluffy, about 2-3 minutes.
- Mix in the vanilla extract, lemon zest, and lemon juice until fully incorporated.
- Gradually sift in the flour and salt, mixing on low speed until just combined.
- Scoop tablespoon-sized portions of the dough, roll them into balls, and place them on a parchment-lined baking sheet, allowing space for spreading.
Baking
- Bake in the preheated oven for 15-20 minutes, or until slightly golden around the edges.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
- Let them cool completely before dusting with powdered sugar, if desired.
Notes
For a firmer cookie, chill the dough for about 30 minutes before shaping. Experiment with different flavors by adding a touch of lavender or orange zest.
