Preparation
- Preheat your oven to 350°F (175°C). Grease and line your cupcake pan with liners.
- In a bowl, whisk together the flour, baking powder, and salt. Set this bowl aside.
- In a larger bowl, beat the softened butter and granulated sugar together until light and fluffy—about 3 to 5 minutes.
- Add the eggs one at a time, mixing well after each addition, followed by the milk and lemon zest. Mix until well combined.
- Gradually add the dry ingredients to the wet mixture and fold gently until just combined. Be careful not to overmix.
- Gently fold in the fresh raspberries. They should be evenly distributed throughout the batter.
Baking
- Fill the cupcake liners about 2/3 full with batter. Bake in the preheated oven for 18-20 minutes, or until a toothpick comes out clean.
- Once baked, allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
Assembly
- Once cooled, generously dollop lemon curd on top of each cupcake.
