Preparation
  1. Preheat your oven to 350°F (175°C). Grease and line your cupcake pan with liners.
  2. In a bowl, whisk together the flour, baking powder, and salt. Set this bowl aside.
  3. In a larger bowl, beat the softened butter and granulated sugar together until light and fluffy—about 3 to 5 minutes.
  4. Add the eggs one at a time, mixing well after each addition, followed by the milk and lemon zest. Mix until well combined.
  5. Gradually add the dry ingredients to the wet mixture and fold gently until just combined. Be careful not to overmix.

Baking
