Dough Ingredients
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter (cold) helps create a flaky texture
  • 1 large egg
Filling and Topping
  • 1/2 cup lemon curd (store-bought or homemade)
  • 1 tablespoon milk for icing
  • 1 teaspoon lemon zest
  • powdered sugar for icing to taste

Method
 

Preparation of Dough
  1. In a large bowl, whisk together the flour, sugar, and salt.
  2. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  3. Add the egg and mix until the dough forms a ball.
  4. Wrap in plastic wrap and refrigerate for 15-20 minutes.
Rolling and Cutting Dough
  1. On a lightly floured surface, roll out the dough to about 1/8 inch thick.
  2. Cut the dough into rectangles, approximately 3x4 inches, to get about 6 rectangles.
Filling and Sealing
  1. Place half of the rectangles on a baking sheet lined with parchment paper.
  2. Spoon a tablespoon of lemon curd onto the center of each rectangle, leaving space around the edges.
  3. Place a second rectangle atop the filled ones and press the edges with a fork to seal securely.
Baking and Icing
  1. Preheat your oven to 375°F (190°C) and bake the tarts for 15-20 minutes or until golden brown.
  2. In a small bowl, mix the powdered sugar, milk, and lemon zest to create a smooth icing.
  3. Once the pop tarts have cooled, drizzle the icing over the top.
Serving
  1. Let your Lemon Pop Tarts sit for a few minutes for the icing to set before serving.
  2. Enjoy with a cup of tea or coffee!

Notes

For the best flaky crust, chill the dough before rolling it out. You can also experiment with other Halal-friendly fillings like berry compote. Keep a close eye while baking to avoid overbaking.
