Method
Preparation of Dough
- In a large bowl, whisk together the flour, sugar, and salt.
- Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Add the egg and mix until the dough forms a ball.
- Wrap in plastic wrap and refrigerate for 15-20 minutes.
Rolling and Cutting Dough
- On a lightly floured surface, roll out the dough to about 1/8 inch thick.
- Cut the dough into rectangles, approximately 3x4 inches, to get about 6 rectangles.
Filling and Sealing
- Place half of the rectangles on a baking sheet lined with parchment paper.
- Spoon a tablespoon of lemon curd onto the center of each rectangle, leaving space around the edges.
- Place a second rectangle atop the filled ones and press the edges with a fork to seal securely.
Baking and Icing
- Preheat your oven to 375°F (190°C) and bake the tarts for 15-20 minutes or until golden brown.
- In a small bowl, mix the powdered sugar, milk, and lemon zest to create a smooth icing.
- Once the pop tarts have cooled, drizzle the icing over the top.
Serving
- Let your Lemon Pop Tarts sit for a few minutes for the icing to set before serving.
- Enjoy with a cup of tea or coffee!
Notes
For the best flaky crust, chill the dough before rolling it out. You can also experiment with other Halal-friendly fillings like berry compote. Keep a close eye while baking to avoid overbaking.
