Preparation
  1. Wash the kale leaves thoroughly to remove any dirt. Tear the leaves into bite-sized pieces and place them in a large salad bowl.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well combined.
Combine Ingredients
  1. Pour the dressing over the torn kale leaves, using your hands to gently massage the kale.
  2. Sprinkle the grated Parmesan cheese over the kale and mix well.
  3. If using cherry tomatoes, slice them in half and toss them into the salad.
Serving
  1. Serve the salad immediately or let it sit for a few minutes for better flavor.

Notes

For substitutions, try crumbled feta or a halal-certified cheese. Dress the salad just before serving to maintain the crispiness of the kale. Avoid cutting the kale into tiny pieces.
