  1. Start by washing the kale thoroughly under cold water. Remove the tough stems and chop the leaves into bite-sized pieces. Place the chopped kale in a large mixing bowl.
  2. Drizzle a tablespoon of olive oil and a pinch of salt over the kale. Use your hands to massage the kale for about 2-3 minutes to soften the leaves.
  3. In a separate bowl, whisk together the lemon juice, remaining olive oil, salt, and pepper. Adjust the seasoning to taste.
  4. Pour the dressing over the massaged kale and sprinkle in the grated Parmesan cheese. Toss everything together gently.
  5. Garnish with additional Parmesan cheese if desired, and enjoy the salad fresh or allow it to marinate in the fridge for about 30 minutes for enhanced flavor.
