  • 1 cup couscous (preferably fine couscous)
  • 1 cup vegetable broth or water Using vegetable broth enhances the flavor.
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest For additional zing.
  • 2 tablespoons olive oil
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped (optional) Omit if not preferred.
  • salt To taste.
  • black pepper To taste.

Method
 

Cooking Instructions
  1. In a saucepan, bring 1 cup of vegetable broth or water to a boil.
  2. Measure out 1 cup of couscous and pour it into the boiling liquid. Stir quickly to ensure all couscous is moist.
  3. Once the couscous has absorbed the liquid, remove the saucepan from heat, cover it, and let it sit for about 5 minutes.
  4. After the resting period, use a fork to fluff the couscous gently. Add in olive oil, fresh lemon juice, lemon zest, parsley, and mint (if using). Season with salt and pepper to taste.
  5. Transfer the couscous to a serving dish, and enjoy warm or at room temperature.

Notes

Feel free to substitute herbs for different flavors, and ensure to follow resting time closely to maintain texture. Refrigerate in an airtight container for up to 4 days.
