Preparation
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a large mixing bowl, whisk together the flour, baking powder, and salt until well combined. Set aside.
- In another bowl, cream the softened butter and granulated sugar together until the mixture becomes light and fluffy.
- Add the eggs, milk, fresh lemon juice, and lemon zest to the butter and sugar mixture. Mix until smooth.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix!
Baking
- Pour the batter equally into the prepared pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
Frosting and Serving
- In a mixing bowl, beat the softened butter until creamy. Gradually add powdered sugar, lemon juice, and lemon zest. If the frosting is too thick, add milk until the desired consistency is reached.
- Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of frosting on top, add the second layer, and frost the entire cake.
- Cut the cake into slices and enjoy your slice of heaven!
Notes
For best results, use fresh lemons and ensure all ingredients are at room temperature before beginning. Store leftover cake in an airtight container in the fridge for up to 3 days.
