Preparation
- Season the chicken breasts on both sides with salt and pepper.
Cooking
- In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken breasts.
- Sear the chicken for about 5-7 minutes per side until golden brown and cooked through. The internal temperature should reach 165°F (75°C).
- Once the chicken is cooked, transfer it to a plate and cover it to keep it warm.
- In the same skillet, reduce the heat to low and add the butter, allowing it to melt.
- Stir in the minced garlic and cook for another minute until fragrant. Then add the lemon juice and zest, mixing well.
- Toss the fresh green beans into the skillet and sauté them for about 3-4 minutes until they are bright green and tender but still crisp.
- Return the chicken back to the skillet, spooning the garlic butter sauce over the top. Cook everything together for another minute to ensure it’s heated through.
Serving
- Remove from heat, garnish with chopped parsley, and serve warm.
Notes
Use fresh lemons for the best flavor. You can substitute chicken with fish or shrimp. This recipe can easily be doubled.
