Graham Cracker Base
  • 1 package lemon instant pudding mix Use instant mix for best results.
  • 1 cup milk Whole or low-fat milk can be used.
  • 1 cup whipped topping Can substitute with low-fat whipped topping or Greek yogurt.
  • 1 cup crushed graham crackers Ensure they are finely crushed for a smooth base.
  • 2 tablespoons melted butter Adds richness to the base.
  • 1 tablespoon lemon juice Freshly squeezed is preferred.
  • to taste Lemon zest For garnish, enhances flavor and appearance.

Method
 

Preparation of Graham Cracker Base
  1. In a mixing bowl, combine crushed graham crackers, melted butter, and a pinch of sugar (optional). Stir until the mixture resembles wet sand.
  2. Press firmly into the bottom of a 9x9 inch square dish to create a solid base. This should take about 5 minutes.
Making the Lemon Pudding
  1. In another bowl, whisk together the lemon pudding mix and milk until smooth and starts to thicken, about 2 minutes.
Combining Ingredients
  1. Gently fold the whipped topping and lemon juice into the pudding mixture until well combined for a light, airy consistency.
Layering the Dessert
  1. Spread half of the lemon pudding mixture over the graham cracker base.
  2. Add a layer of the remaining graham crackers, then pour the rest of the lemon pudding over it.
  3. Spread evenly and finish with a final layer of graham crackers.
Chilling the Dessert
  1. Cover with plastic wrap and refrigerate for at least 2 hours to set and meld flavors.
Serving
  1. Before serving, top with lemon zest for an extra burst of citrus flavor and color.

Notes
