Ingredients
  

For the Cookie Base
  • 1 cup unsalted butter, softened Ensure butter is at room temperature.
  • 1 cup granulated sugar
  • 2 large eggs
  • Zest of 2 lemons Adds flavor.
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
For the Filling
  • 1 cup lemon curd Store-bought or homemade.
Optional Garnish
  • to taste Powdered sugar For dusting.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  3. Incorporate the eggs one at a time, mixing well after each addition. Stir in the lemon zest.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, blending until just combined.
  5. Use a cookie scoop to drop spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
  6. Gently press your thumb or the back of a spoon in the center of each dough ball to create a small well.
Baking
  1. Bake cookies in the preheated oven for 10-12 minutes. About 2 minutes before they’re done, remove them and fill each indentation with lemon curd.
  2. Return to the oven for the remaining bake time.
Cooling and Serving
  1. Once baked, allow the cookies to cool on a wire rack.
  2. If desired, dust with powdered sugar before serving.

Notes

Ensure all ingredients are Halal-compliant. You may use other fruity curds for a different flavor but stick to citrus for a similar taste. Don't overbake; cookies should be lightly golden and soft in the center.
