Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
- Incorporate the eggs one at a time, mixing well after each addition. Stir in the lemon zest.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, blending until just combined.
- Use a cookie scoop to drop spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
- Gently press your thumb or the back of a spoon in the center of each dough ball to create a small well.
Baking
- Bake cookies in the preheated oven for 10-12 minutes. About 2 minutes before they’re done, remove them and fill each indentation with lemon curd.
- Return to the oven for the remaining bake time.
Cooling and Serving
- Once baked, allow the cookies to cool on a wire rack.
- If desired, dust with powdered sugar before serving.
Notes
Ensure all ingredients are Halal-compliant. You may use other fruity curds for a different flavor but stick to citrus for a similar taste. Don't overbake; cookies should be lightly golden and soft in the center.
