Method
Preparation
- Preheat your oven to 350°F (175°C).
- Line a 12-cup muffin tin with paper liners.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
Mixing Batter
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Beat in the eggs one at a time, ensuring they are fully incorporated.
- Add the milk, lemon juice, and lemon zest to the mixture, and mix until well combined.
- Gradually add the dry ingredient mixture to the wet ingredients, stirring just until combined. Avoid overmixing.
- Gently fold in the raspberries, being careful not to break them apart too much.
Baking Cupcakes
- Divide the batter evenly among the prepared muffin cups, filling each cup about two-thirds full.
- Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
- Remove the cupcakes and let them cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
Preparing the Frosting
- In a separate bowl, beat the softened butter until creamy.
- Gradually add the powdered sugar and heavy cream until reaching desired consistency.
Frosting Cupcakes
- Once cool, frost each cupcake generously with the raspberry buttercream frosting.
Notes
Store cupcakes in an airtight container at room temperature for up to 3 days. Refrigerate for up to a week. Use parchment paper between cupcake layers to prevent sticking when frosted. Reheat in the microwave for 10-15 seconds to warm slightly without melting frosting.
