  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • Powdered sugar for coating

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together all-purpose flour, baking powder, and salt.
  3. In a large mixing bowl, combine softened unsalted butter and granulated sugar. Beat until light and fluffy, about 2-3 minutes.
  4. Beat in the egg, lemon juice, lemon zest, and vanilla extract until fully incorporated.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Roll tablespoons of dough into balls and coat each ball in powdered sugar.
Baking
  1. Place the coated cookie balls on a parchment-lined baking sheet, spaced about 2 inches apart.
  2. Bake for 10-12 minutes or until the edges are golden.
  3. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container for up to one week, or freeze for up to three months. For a warm treat, microwave for 10-15 seconds before serving.
