Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together all-purpose flour, baking powder, and salt.
- In a large mixing bowl, combine softened unsalted butter and granulated sugar. Beat until light and fluffy, about 2-3 minutes.
- Beat in the egg, lemon juice, lemon zest, and vanilla extract until fully incorporated.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Roll tablespoons of dough into balls and coat each ball in powdered sugar.
Baking
- Place the coated cookie balls on a parchment-lined baking sheet, spaced about 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container for up to one week, or freeze for up to three months. For a warm treat, microwave for 10-15 seconds before serving.
