  • 1 lb chicken breast, diced
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 medium Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Method
 

Preparation
  1. Begin by dicing your chicken breast into bite-sized pieces. Set it aside.
  2. In a large pot over medium heat, drizzle a bit of oil and sauté the diced onion, carrots, and celery until the onions become translucent, about 5 minutes. Add the minced garlic and stir for an additional minute.
  3. Once the veggies are looking vibrant, add the chicken pieces, seasoning with salt and pepper. Cook until the chicken is browned on all sides, about 5-7 minutes.
  4. Pour the chicken broth into the pot and bring it to a simmer. Once it’s bubbling, add the orzo pasta and cook according to package instructions, usually about 8–10 minutes.
  5. When the orzo is cooked through, squeeze in the lemon juice and stir to combine. Adjust seasoning to taste if needed.
  6. Ladle the soup into bowls, garnish with freshly chopped parsley, and enjoy!

Notes

For variations, you can substitute chicken with diced turkey or chickpeas for a vegetarian option. To make it creamier, add a splash of cream at the end. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
