Preparation
- Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish or line it with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs, one at a time, mixing well after each addition. Stir in the lemon zest and lemon juice until combined.
- In another bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry mixture to the wet mixture, mixing until just combined.
- Pour the batter into the prepared baking dish, leveling the top with a spatula. Bake for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the brownies cool in the dish before lifting them out. Once cooled, dust with powdered sugar for that final touch.
Notes
For dairy-free option, use coconut oil instead of butter. Gluten-free flour can also be used. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
