For the Brownies
  • 1 cup granulated sugar
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1 tablespoon lemon zest (freshly grated) For the best flavor
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Preparation
  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish or line it with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs, one at a time, mixing well after each addition. Stir in the lemon zest and lemon juice until combined.
  3. In another bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry mixture to the wet mixture, mixing until just combined.
  4. Pour the batter into the prepared baking dish, leveling the top with a spatula. Bake for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  5. Let the brownies cool in the dish before lifting them out. Once cooled, dust with powdered sugar for that final touch.

Notes

For dairy-free option, use coconut oil instead of butter. Gluten-free flour can also be used. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
