Preparation
- Preheat your oven to 350°F (175°C) and prepare a 9x13-inch baking dish by greasing it or lining it with parchment paper.
- In a large mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Incorporate the large eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, salt, and baking powder. Gradually add this mixture to the wet ingredients, stirring until just combined.
- Add the freshly squeezed lemon juice and lemon zest to the batter, folding until fully incorporated.
Baking
- Pour the mixture into your prepared baking dish, smoothing it evenly with a spatula.
- Bake in your preheated oven for 30-35 minutes or until the edges are golden and a toothpick inserted in the center comes out clean.
- Once baked, allow the bars to cool completely in the pan.
- Just before serving, dust with powdered sugar.
- Slice into squares and enjoy your delicious Lemon Brownie Bars!
Notes
For a light tropical twist, use coconut oil instead of unsalted butter. Adjust baking time to avoid dry bars and ensure accurate measurement of flour using the spoon-and-level method. Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Freeze for up to three months. Reheat in the microwave for 15-20 seconds for freshness.
