Preparation
- Preheat your oven to 325°F (165°C).
- In a mixing bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Stir until the mixture resembles wet sand.
- Press this mixture firmly into the bottom of a greased 9x9-inch baking pan.
- Bake the crust in the preheated oven for about 10 minutes, or until golden brown. Remove from the oven and set aside to cool.
- In another large bowl, beat the softened cream cheese with 1 cup of sugar until smooth and creamy, about 2-3 minutes.
- Add the eggs one at a time, mixing well after each addition. Stir in the lemon juice and zest until fully blended.
- Gently fold in the blueberries.
Baking
- Pour the cream cheese mixture over the baked crust. Bake in the oven for approximately 25-30 minutes, or until the center is set but slightly jiggly.
- Allow the bars to cool to room temperature before refrigerating for at least 2 hours. Cut into bars and serve chilled.
Notes
Top each bar with a sprinkle of powdered sugar or a dollop of whipped cream for added flavor. To store, keep them in an airtight container in the refrigerator for up to a week.
